- 2 chicken breasts or 4 chicken thighs, de-boned and skinned,
- 1 head broccoli cut into florets,
- 1 white onion, sliced (around 120g),
- 1 thumb fresh ginger, sliced finely,
- 3 cloves garlic, thinly sliced,
- 1.5 tbsp premium oyster sauce (I used Lee Kum Kee brand),
- 3 tsp fish sauce,
- 2 tsp white granulated sugar,
- 1/2 chicken stock cube,
- 350 ml boiling water,
- 1 pinch white pepper, and salt to season,
- 1.5 tbsp cooking oil (I used vegetable)
- 1 tsp MSG (optional)
- For the marinade:
- 2 tbsp cornflour,
- Half a bowl cold water,
- 2 tbsp light soy sauce
Instructions to make to make Chicken & Broccoli In Oyster Sauce
- Mix the cornflour into the bowl of cold water until no lumps remain. Add the light soy sauce and stir. Take the chicken and cut it into bite sized chunks, trim off any excess fat. Add to the cornflour mix. Leave in the fridge to marinade for at least 30 mins.
- Heat up a wok over a high heat and add some oil. Once hot add the onion and allow to soften, this should take round 4-5 minutes, then pour off 90% of the marinade water from the chicken and pour the rest into the wok. Cook for 2-3 minutes then add in the garlic and ginger and season with a pinch of white pepper and a pinch of salt. You can add 1tsp of MSG here if you wish. Stir around in the wok.
- Turn the heat down to medium. Add in the sugar and stir. Crumble over the stock cube then add in the boiling water. Bring to a simmer.
- After simmering for a minute add the fish and oyster sauce. Stir well to combine. Add in the broccoli florets and simmer gently until 90% of the water has evaporated and reduced down and the broccoli tender. I find it best to cover with a lid at this point, if you don't have a lid for your wok simply use a large saucepan lid and sit it into the wok to steam the broccoli. When the sauce has reduced a bit and thickened, it's ready. Serve up and enjoy! :)
