- Oil for frying
- For Dry Coating Ingredient :
- 400 gram plain flour
- 100 gram cornstarch
- 1 teaspoon chicken stock (powder)
- 1 teaspoon garlic powder
- 1/4 salt
- For The Liquid Coating Ingredient :
- 300 ml cold water/ ice water
- 300 gram plain flour
- 40 gram cornstarch
- 1/2 teaspoon milk powder
- 1 egg yolk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions to make to make Kezia Fried Chicken (Ayam Goreng Crispy)
- For Liquid coatings: Mix flour, cornstarch, milk powder, baking powder, pepper, salt and pepper. Stir well. Add the egg yolks and water little by little while stirring until well blended. Store in a refrigerator / cool place.
- For the Dry Coating: Mix all dry coating materials. Stir well. Set it aside.
- Season chicken pieces with pepper, salt, garlic powder, coriander, and gingger. Stir well. Let stand 30 minutes so that the spices are absorbed.
- Roll the chicken pieces into a dry coating until the entire surface is covered in flour. Dip it into a liquid coating and roll it back into a dry coating while kneading it. Do this method until the chicken runs out.
